Scientific interests: Professor, habilitated doctor of agricultural sciences in the field of food technology and nutrition, doctor of medical sciences, dietician, molecular biologist. She specializes in issues related to human nutrition with particular emphasis on diseases resulting from improper nutrition. Continuing her interest in molecular biology, from her studies at the Jagiellonian University and dietetics completed at the Krakow Academy of Andrzej Frycz Modrzewski, she is interested in a new field of science - nutrigenomics examining genetic-nutritional interactions.

Scientific interests: Scientist with interdisciplinary interests focused on the broadly understood impact of the environment on human life and health, with particular emphasis on the role of microorganisms, reactive oxygen species and antioxidants. Her research mainly includes the analysis of microorganisms used in food production and harmful microorganisms; technological, analytical and health aspects of antioxidants (recovery from plant raw materials, food enrichment, interactions with intestinal microbiota); interactions of antioxidants and food ingredients with microorganisms, in particular lactic acid bacteria and yeast, as well as issues related to the formation of sensory parameters of alcoholic beverages under the influence of contact with wood.

Scientific interests: analysis of food ingredients, with particular emphasis on bioactive and health-promoting substances, as well as substances generating sensory sensations. In order to carry out research tasks, I use modern methods of instrumental chemical analysis, using high-performance liquid chromatography (HPLC) and gas chromatography. The research I conduct using liquid chromatography is used for qualitative and quantitative analysis of antioxidant components of food, including phenolic compounds, as well as saccharides, preservatives, dyes, and sugar substitutes. In addition, I also deal with the assessment of antioxidant properties of food using spectrophotometric methods. The research I conduct using the gas chromatography method, using an electronic nose, mainly concerns the qualitative and quantitative analysis of the profile of volatile compounds of raw materials and food products.
