General information

The Center for Innovation and Research on Healthy and Safe Food at the University of Agriculture in Cracow is a university-wide unit supporting the scientific community and the economic environment through a comprehensive approach to food research and production – from the analysis of raw materials, through the design of a new product or production process in laboratories, transferring research results to a semi-technical scale, production and analysis of an innovative product, to the optimization of storage conditions and waste management.

The technical R&D facilities include: 

  • technological laboratories: bakery and confectionery, meat and fish technology, mini-brewery with a grinding plant, sensory laboratory,
  • laboratories: food microbiology and microbiological safety, analytical, HPLC MS-MS, waste processing technology,
  • basic processes laboratory equipped with, among others, a twin-screw extruder with a texturizing attachment for proteins, a supercritical CO2 extractor, a spray dryer, a vacuum evaporator, a freeze dryer, a multi-tasking machine, a device for food preservation using the high-pressure method.

The Centre also has specialist laboratories enabling scientific cooperation with other academic and research centres. They include, among others, a laboratory of highly specialised analytical techniques (equipped with an odour analyser), juice, beverage and wine technology, milk processing technology, a catering laboratory, a bioprocess laboratory, a physical modification laboratory (equipped with stations for food preservation using a pulsed electric field and electromagnetic radiation), a drying laboratory and a laboratory for the recovery of health-promoting substances, as well as a laboratory for sorting, packaging, wrapping and labelling raw materials. Our unit also offers cooperation in the area of ​​issues related to human nutrition using the facilities of the nutrigenomics, proteomics, histology and primary cell laboratories.
